"Miss Bonnie's Stuffed Baked Bell Peppers" Recipe: Serves 4
Ingredients - 4
green or red bell peppers
- Salt
- 5 Tbsp extra-virgin olive oil
- 1 medium yellow onion, peeled and chopped
- 1
clove of garlic, peeled and chopped
- 1 lb of lean ground beef
- 1 1/2 cup of cooked rice or 3/4 cup of raw instant
rice
- 1 cup chopped tomatoes, fresh or canned (drain liquid)
- 1 tbsp chopped fresh oregano or 1 tsp of
dried oregano
- Fresh ground pepper
- (optional) 1 cup of cooked white or yellow corn (drain liquid)
- 1/2
cup ketchup
- 1/2 tsp of Worcestershire Sauce
- Dash of Tabasco sauce
Preparation:
1. Bring
a large pot of water to a boil over high heat. Meanwhile, cut top off peppers 1 inch from the stem end, and remove seeds.
Add several generous pinches of salt to boiling water, then add peppers and boil, using a spoon to keep peppers completely
submerged, until brilliant green (or red if red peppers) and their flesh slightly softened, about 3 minutes. Drain, set aside
to cool. 2. Preheat oven to 350 degrees F. Heat 4 tbsp of the oil in a large skillet over medium
heat. Add onions and garlic, and cook, stirring often, until soft and translucent, about 5 minutes. Remove skillet from heat,
add meat, rice, tomatoes, and oregano, and season generously with salt and pepper. Mix well. 3.
Drizzle remaining 1 tbsp. Oil inside peppers, arrange cut side up in a baking dish, then stuff peppers with filling. Combine
ketchup, Worcestershire sauce, Tabasco sauce, and 1/4 cup of water in a small bowl, then spoon over filling. Add 1/4 cup of
water to the baking dish. Place in oven and bake for 40-50 minutes (or longer, depending on how big the peppers are that you
are stuffing), until the internal temperature of the stuffed pepper is 150-160°F. 4. *Remove from oven 10 minutes before finished baking. Melt your Miss Bonnie's Pimento or Jalapeño
Pepper Cheese in a small glass dish in the microwave. Using a large serving spoon, top the Bell Peppers with Miss Bonnie's
Cheese. Sprinkle seasoned bread crumbs over cheese. Place Bell Peppers back in oven for 10 minutes or until cheese
begins to brown. Click On "Printer Friendly" Button Below To Print This Recipe

"Miss
Bonnie's Stuffed Mushrooms" I have added this easy and delicious appetizer from my anytime serving tips.
All I can say about crafting Appetizer's with
Miss Bonnie's Cheese Spreads is, let your imagination go wild. Chef John, one of Kroger's wonderful
Chefs, created a Miss Bonnie's Stuffed Mushroom that has become a big hit with many of you on our Email Update
List. I am including Chef John's recipe for new visitors to my web site. This one is fast and easy
to prepare. Wonderful anytime, but especially sensational if your having friends or family over for the Holidays
& get togethers.

"Miss Bonnie's Stuffed Mushrooms" Recipe: 1. Remove the stems from
the fresh mushrooms. 2. Bring a pot of water
to a boil. 3. Boil the mushroom caps
for about 4 to 5 minutes for medium and large caps. 4.
Drain in collander and rinse with cold water to stop them from cooking. 5. Dry your mushroom caps on a paper towel 6. Soften (just melted) some Miss Bonnie's (we like the Jalapeño for this one) in a glass bowl
in the microwave. The Pimento
is also yummy. What the heck..Do Both 7. Fill the caps with the the melted
cheese (see attached photo) 8. Sprinkle each cap with seasoned
bread crumbs (be liberal to make them crunchy on top) 9.
Bake in oven or toaster oven at 350 degrees F for 20 to 25 minutes until brown on top Enjoy !
This
really is an easy recipe that only takes about 10 minutes before baking once your water boils. If you like mushrooms,
your gonna love them baked with Miss Bonnie's. We also tried this....Brown
some crumbled sausage or ground meat of choice (season as you like) and fill the caps half way with the sausage,
and top off with Miss Bonnie's. Takes a little longer, but worth the extra time.
